Clearspring Organic Sushi Rice is ideal for making delicious, perfectly cooked rice for use in Japan's most famous dish, sushi. Short grain Selenio rice is very similar to the Japonica rice used in Japanese sushi. Organically grown in the Piedmont region of Italy, where the famous risotto rice is also grown.
After ripening, the rice is polished to perfection at a local mill in the town of Trino. To obtain white rice, the layers below the husk are removed, leaving mainly the starchy endosperm.
Preparation:
Rinse 1 cup (250g) sushi rice in cold water and drain. Place the rice in a saucepan with 1¼ cups (310ml) of cold water. Soak for 30 minutes. Bring to the boil, cover and reduce heat to low. Simmer for 10–12 minutes or until all the water has been absorbed. Remove from heat and let stand, covered, for 10 minutes.
