- For the brownie:
- 100 ml soy drink
- 50 g soft margarine
- For cookies:
- 50 g soft margarine
Tools needed:
Baking dish (20 or 25 cm), hand mixer with whisk and dough hook
Instructions:
- Preheat the oven to 180°C (top/bottom heat) and grease a baking tin thoroughly with oil. If desired, sprinkle the bottom of the tin with a little flour.
- Add the brownie mix, soy drink, and margarine to a bowl. Mix all ingredients with a hand mixer on medium speed until smooth (about 1 minute).
- Pour the dough into the prepared baking pan and smooth it evenly.
- Add the cookie mix and margarine to a bowl. Using the dough hook attachment on low speed, mix until a smooth dough forms. Shape the cookies with your hands and place them on top of the brownie batter in the pan.
- Bake the BROOKIES in the middle of the oven for about 22-25 minutes. After baking, let them cool slightly in the tin before removing and cutting into pieces.
Tip:
Watch the baking time - longer baking times will make it less juicy. You can also replace the soy drink with other plant-based drinks, but keep in mind that this may affect the texture of the dough.
