Clearspring Sweet White Miso Paste is a short-aged Kyoto-style miso with a creamy richness and a delicately salty sweetness. It is traditionally made in small batches to maintain its special quality. While the light color may darken over time, this does not alter the flavor of the miso.
Historically, sweet white miso was reserved for the wealthy, as it required a lot of expensive rice koji to make it. Today, however, anyone can enjoy this flavorful miso on a daily basis.
Recommended use: Add to mashed potatoes instead of milk or to creamy soups instead of cream. Also ideal for snacks, dips and salad dressings. Mix with oils and vinegars to make savory sauces and salad dressings, or dilute with cooking liquid to enrich the flavor of soups and stews. Also a delicious dairy alternative to vegetable purees.
